Ingredients List    

  • 2 cups of jasmine rice.
  • 1 pound of boneless and skinless chicken breasts.
  • 2 tablespoons of olive oil.
  • 2 teaspoons of garlic powder.
  • 2 teaspoons of chilli powder.
  • 1 teaspoon of dried oregano.
  • 1 teaspoon of ground cumin.
  • 1 teaspoon of smoked paprika.
  • Salt and pepper to taste.
  • ½ cup of crumbled feta cheese.
  • ½ cup of diced red onion.
  • ½ cup of diced red bell pepper.
  • ¼ cup of fresh cilantro, chopped.
  • ¼ cup of fresh parsley, chopped.
  • ¼ cup of fresh lime juice.

Step 1: Choose the best Ingredients    

When selecting ingredients for this dish, it’s important to choose the best quality items you can find. For the perfect jasmine rice, be sure to buy a high-quality brand that is not pre-cooked or pre-flavoured. The natural flavour and aroma of Jasmine rice make it the ideal choice for those fresh and light salads usually eaten in summer.

Step 2: Cook the Jasmine rice    

To cook the jasmine rice, start by rinsing the rice in a fine mesh strainer for about two minutes. After rinsing, place the rice in a medium-sized pot and add two cups of water. In a large bowl, combine the cooked jasmine rice, cooked chicken, feta cheese, red onion, red bell pepper, cilantro, parsley, and lime juice. Stir everything together until it is evenly combined.

Step 5: Serve and Enjoy!    

To serve, divide the spicy salad with Jasmine rice and chicken into individual bowls and top with the desired amount of hot sauce or sour cream. Enjoy!
